Proteínas: Estructura y Funciones

Las proteínas son biomoléculas cuaternarias compuestas por carbono, hidrógeno, oxígeno y nitrógeno CHONC-H-O-N. Su unidad básica son los aminoácidos que se unen mediante enlaces peptídicos, y se sintetizan en los ribosomas.

Los aminoácidos se dividen en dos grupos: los esenciales, que debemos obtener a través de la alimentación, y los no esenciales, que nuestro propio cuerpo puede sintetizar. Esta distinción es importante porque necesitamos consumir alimentos ricos en aminoácidos esenciales para mantenernos saludables.

Las proteínas cumplen diversas funciones en nuestro organismo: defensa (inmunoglobulinas o anticuerpos), reguladora u hormonal (insulina, tiroxina), catalizadora (enzimas como lactasa, amilasa), estructural (colágeno, queratina) y de reserva (ovoalbúmina).

💡 ¡Dato clave! Las enzimas son proteínas especializadas que aceleran reacciones químicas. Por ejemplo, la lactasa descompone la lactosa de la leche, y si te falta esta enzima, puedes ser intolerante a la lactosa.

Según su forma, las proteínas se clasifican en fibrosas (alargadas, resistentes e insolubles como el colágeno) y globulares (con torsiones y plegamientos ordenados, solubles en agua como las enzimas y anticuerpos). Cada tipo tiene funciones específicas adaptadas a su estructura.
