Proteínas Orgánicas

Las proteínas son biomoléculas cuaternarias compuestas de carbono, hidrógeno, oxígeno y nitrógeno CHONC-H-O-N. Su unidad básica son los aminoácidos, que se unen mediante enlaces peptídicos y se sintetizan en los ribosomas. Hay aminoácidos esenciales que debemos obtener de los alimentos y no esenciales que nuestro cuerpo puede fabricar.

Las proteínas cumplen funciones vitales en nuestro organismo. Actúan como defensa a través de las inmunoglobulinas (anticuerpos). También tienen función reguladora como la insulina (páncreas) y la tiroxina (metabolismo). Como catalizadoras, las enzimas aceleran reacciones químicas: la lactasa descompone la lactosa, la amilasa el almidón, etc.

Además, las proteínas tienen función estructural (colágeno y queratina) y de reserva (ovoalbúmina). Según su forma, se clasifican en fibrosas y globulares. Las fibrosas son alargadas, resistentes e insolubles, como el colágeno. Las globulares tienen pliegues ordenados, son solubles en agua, como las enzimas y anticuerpos.

💡 ¡Dato interesante! Cada enzima es específica para un tipo de sustrato. Por ejemplo, la lactasa solo puede descomponer la lactosa. Esta especificidad es como una llave que solo encaja en una cerradura determinada.
